WRECIPE WEDNESDAY… It’s Holiday Cookie Time, Ginger!

Wrecipe WednesdayI know, I know – we barely just finished Thanksgiving, and I’m already talkin’ Christmas and Hanukkah.  Face it, though, the time is upon us to break out those cookie sheets, that KitchenAid mixer that was handed down from your mother or grandmother, and to prepare to cover every nook and cranny of your kitchen with flour and powdered sugar!  We all have our ‘go-to’ cookie recipes for the season, so I thought, this year, I’d start hunting for some different ones.  Some special cookies that could become my ‘signature’ cookie for the cookie exchange party.

When the weather starts to turn nippy, and the trees and tinsel start appearing everywhere, when ‘Visions of Sugarplums’ start dancing in the heads of little children, my cravings go to Gingerbread and Gingersnaps.  Weather in tea, cake, or little men, there is something about chewy Gingerbread that BELONGS in December!

Pair these GINGERSNAP SANDWICH COOKIES WITH WHITE CHOCOLATE FILLING with some Chai Tea, or with a cup of Eggnog Latte, a glowing fireplace, a warm lap throw and an old, sappy holiday movie, and you’ll soon forget that you were supposed to be making these for the annual Cookie Exchange!

P.S. – I have on good authority that Santa might like these too!  And, if Rudolph gets the loops going a bit fast in those trial runs, ginger is also known to relieve nausea and motion sickness!
